Nutty Sergey Sokolov, 46, claimed there was "chemistry" between him and his victim but "he became enraged when she refused to sleep with him after he bought her a shish kebab", police say.
He detailed how then went to find a "cutting tool" to sever her head after he killed her.
The crazed cabbie then popped the head of the victim in the back of his car, completed a shift's work and then dumped it at an industrial park.
The butchered victim was named locally in Russia's fourth city Eketerinburg as Kristina Medvedeva.
Young Kristina had turned down Sokolov's advances after he bought her a shish kebab and the couple went to a nearby lake.
She left home for the fateful meeting with Sokolov and was not seen for a further three days until her beheaded corpse was discovered.
Medvedeva had changed her relationship status as "actively searching" on a social media account and was known to use dating websites.
Police initially said there was no evidence that she had been raped – but full forensic tests are now under way.
Sokolov could face up to 20 years in prison for the horrific murder.
