Yes, that's perfectly fine.
Though if you drive for Uber, and have the app on, while you're having your coffee, they will tell you to turn it off (and they can easily watch and wait for you to finish and follow you to see that you leave airport grounds).
As the police have the (passenger) app themselves, they can see where the cars are parked up.
They can also request you, and they can see on the map on the app where you are, so they can easily see where you were when you received their request.
I believe they're mainly targeting Uber drivers simply because they're easy targets - as you can see where they are on the app, and are probably taking business away from Gatwick Airport cars, who've probably complained.
