From what I can glean from the internet it would seem that the executor does not actually have to show you the will, however you can get a copy once probate has been granted.Unfortunately by then, you really will get into an uphill expensive battle as the proceeds will be well distributed. The situation/probate as it is of the moment will take a number of weeks to be finalised, as such it would leave you time to seek legal advice over your concerns.
He (stating the obvious) would be the first place that I would start to look re her missing bank card and the 30k, it may very well be linked to withdrawals of the missing money,add that to a new will on the scene, and it starts to sound very iffy.The plumber claims to have worked for her over a number of years! then I would guess that he has receipts to back this up from previous accounting years, along with whatever he has done in he past financial year - I doubt it very much that he has, as such it might help to destroy his credibility re his claim of working for her.
Your concerns re the bank card/the missing 30K/the outstanding debt + a non relative gaining benefit, might very well give you grounds for an investigation/challenging the will. This site that I have come across gives a number of reasons that you can challenge the will, it will not be cheap........

Reading up on wills, it would seem that she would have had to have had two witnesses to a will - would these witnesses have been friends Or were the wills made in a sols office, if it is a sols office.....who did she use as witnesses? The convenient file that you came across (all nice and organised) may very well be legit, having said that, is it possible that she also had another/other bank accounts, that would also show another paper trail as to where monies might have gone.
