It is my understanding that the "7 day contract" can be of ANY length but not less than 7 days, is this correct?.

Therefore would it be legal to continue (after 1st Jan 2008) with the exemption if a contract was drawn up (12 months ago) or ( this week ) that lasts for say 5 years. The current contract is legal and above board in every way.

Interesting thought. Personally I wouldn't have thought so since it's the exemption which has been abolished. The contract would be valid but you would need a licenced vehicle to do the work. If you had such a contract you could be in breach of it if you cannot supply a suitably licenced vehicle.
Could be wrong though.

I thought the 7 day contract thingy was so that you didn't need a licensed vehicle.

Interesting but I doubt it will be legal.

The exemption allowed it in the original act, and as the exemption is no longer (or from 01/01/08) allowed we must go back to the wording of the original act (less the opt-out).

Which means no contract opt-out allowed. :D

You or someone else might have a contract, but thankfully criminal law is a bigger mush than civil law.

It was. When abolished next year the exemption will be removed and a licenced vehicle will be required.

BTW what's happened to your avatar?
